Infusing Green Tea in Honey

At my home there’s always honey.

I don’t eat honey that much, but my wife and daughter like it a lot.

Some time ago I read this post about herb-infused honey and decided to give it a try.

Ingredients:

  • sencha, 1 tbsp
  • honey, 250 ml (1 cup)
sencha on top of honey

Basically, it’s just a cold infusion that takes very long. At least 5 days.

So I just mixed the sencha and honey in a jar, and let it infuse.

Straining the sencha took some time, and even then there were many small bits of tea leaves in the honey.

But other than that it is an easy process.

The honey became a little darker, I should have used a honey with a lighter color.

While I like the taste, I feel that the flavor of the honey greatly overpowers the sencha.

Again, maybe I should have used a milder honey. Or perhaps I should have infused for more than 5 days.

I poured some of it on my oatmeal this morning.
